Last year we celebrated our first Christmas a married couple. To our delight, we were able to spend time with both of our families AND have Christmas morning in our own apartment. With a low budget, we posted about our simple Christmas decorating.

This year, it’s the same theme, but with a big bonus… A Christmas tree! Driving past our apartment dumpster (where we also acquired our tandem) we noticed something odd in front. I hopped out of the car to take a look, and low and behold, it was an artificial, white Christmas tree! (Doesn’t “artificial” sound better than “fake” tree?) 🙂

We brought it up to our apartment and with a few minutes of attention, ta da! We had our first, lovely Christmas tree.

Cooking

Hot Beef Dip

It seems each holiday season I find one Hors d’œuvre recipe I love. Last year it was Brie En Croute, this year its my mom’s Hot Beef Dip. We brought it to a Christmas party last night, and have been enjoying munching on the leftovers all today!

Ingredients

3 to 4 oz dried beef, minced (found in pouches by the pepperoni or in  jars by tuna)
2 8-oz pkg of cream cheese, softened
1 pint sour cream
1 med. onion, chopped & sautéed (about 1/3 cup)
Crackers (I like Ritz!)

Directions

Mix ingredients (minus the crackers), pour into a greased one qt sized baking dish. Bake at 325 for 45 minutes. Serve warm with crackers. Enjoy!
